The Selvatiche community cooperative was founded in May 2025 in Monchio delle Corti by five women who wanted to showcase the beauty and riches of the Cedra and Parma Valleys.

We are Alessandra, Elena, Mara, Maria Pia, and Monica, and with this cooperative, we want to offer new perspectives to our children, raising them to understand the importance of loving and protecting this beautiful, too-often-forgotten mountain area. We therefore want to offer a reason to stay, a reason to return, and a reason to live in this highland. That's why we like to call ourselves the Guardians of the Forest.

Our work therefore focuses on the collection and processing of spontaneous products typical of the Apennine undergrowth, such as mushrooms, small fruits and chestnuts.

PRODUCTS

We withdraw the mushrooms collected in our valley, we certify them and We sell fresh, dried and pickled vegetables; we collect the small fruits and we transform them into compotes and jams; we collect the chestnuts and we get it flour.

We restored an old stone chestnut dryer, and after years of inactivity, the fire was lit inside once again, allowing us to dry chestnuts as per tradition. The lighting of an old dryer took on an important social significance: it rekindled memories, rekindled tradition, and rekindled hopes.

Hypericum Perforatum L. is a wild flower of the Apennines that has its maximum flowering in the summer months. Its many and prodigious properties have made it
made famous since ancient times so much so that it was called St. John's Wort.
St. John's Wort oil is made by macerating freshly picked buds in cold-pressed almond oil.
We decided to exploit the properties of this beautiful flower through an oleolite obtained from the freshly picked buds and left to macerate in cold-pressed organic almond oil.
This, like so many others, is one of the beauties of our territory that we, the guardians of the forest, wanted to share with you.

Collected and produced in Val Cedra from wild flowers.

We dried the chestnuts, as was traditional in the past, in an ancient grate, keeping the fire burning for 40 days. Once dried, the chestnuts were carefully selected to obtain a sweet-tasting, light-colored flour. They were ground in a water mill with a stone grinder.

Porcini mushrooms (Boletus Edulis) were collected in the Cedra and Parma Valleys.
We dried them within hours of harvesting and selected them in compliance with the law of the Ministry of Industry, Trade and Crafts of August 23, 1993, no. 352, which establishes the rules for the harvesting and marketing of fresh and preserved mushrooms.

They're the first to grow in the forest. We process them as soon as they're harvested to preserve the unmistakable flavor of the Porcino mushrooms from the Cedra and Parma valleys.

– Autumn compote with grapes and walnuts
Grapes, quinces, and walnuts harvested in the Cedra and Parma valleys create a compote to accompany cheeses, meats, and cured meats.

Black cherries and currants are an unusual combination with a bold flavor. An experiment that immediately won us over.

– Seedless wild raspberry compote
Raspberries are harvested exclusively in the Cedra and Parma Valleys. We cooked the compote by sieving the fruit before bottling it, resulting in a velvety puree that preserves the fruit's fresh flavor.

– Blackberry compote
The blackberry compote didn't require any secret ingredients to be delicious! We sieved the compote before bottling it, resulting in a rich, smooth puree.
