The “Al Fusinaro” agricultural company is located in the small municipality of Monchio delle Corti on the Tuscan-Emilian Apennines, in the Alta Val Cedra within the Parco dei Cento Laghi
The farm is fed by the fresh waters of the Cedra stream in Valditacca, where the temperature reaches a maximum of 15° in the summer months.
The facility, of very modest size, is built in nature, protected by the embrace of large sandstone boulders and chestnut woods, leaving the surrounding landscape "almost wild" and natural as if it were the course of the river.
Trout farming began in the early 60s based on the idea of ​​Ilvio Malmassari (born in 1923), commissioned by the Province of Parma to produce brown trout for the repopulation of local streams.
After a few years, Ilvio decided to produce only rainbow trout, for sale and consumption in his restaurant, named “Al Fusinaro” in honor of the place where it is located.
Around the early 90s, the hatchery for fry production was decommissioned and only trout were raised to adult trout suitable for consumption.
Trout farming will remain active until 2018.
In 2020, after a period of suspension, the business was resumed by his granddaughter Monica, with the intention of continuing the process begun by her grandfather, but above all to never forget the promise made to him to honor his life's work with the memories of a happy childhood among the woods and the Torrente.
